Watercress is one of the bunches that attracts me from the shelves. Even it reminds me 'SEMIZOTU' my favourite veggie in Turkey, they are not related at all and their taste and texture are far from each other. On the hand, watercress is very reach in minerals like iron, calcium, iodine  and vitamins like A, B6 and K. I have been using Watercress with salads mostly but could not really come to the most tasty recipe solution to it until today. This salad is a good combination of fiber. vitamins , minerals and vegetable protein. It makes a great lunch in these sunny days. Try it you will not regret !!


1 cup of cooked lentil

1 cup of washed and drained watercress (you can try this recipe with baby arugula)

1/4 cups of blueberries 

1/4 cups thin sliced red onions rubbed with sea salt


1/4 avocado

2 tbs Apple cider vinegar

1 tbs Extra virgin olive oil

2-3 tbs water (increase it according to the texture of the sauce)

1/2 ts sea salt

1. Place all ingredients by layer on a salad bowl. 

2. Mix the sauce ingredients in a food processor and bring it to the right texture by adding more water if needed.

3. Pour the sauce on your salad. Buon Apetite
