This is our family's favourite recipe. It is a healthy comfort food that serves you all you need in one plate.Carbs,protein,vitamins and minerals.Include your kids to prepare this recipe because it is fun to shape the meatballs.

Ingredients:

For the meatballs:

1 pound ground organic beef

1/2 cups rice

bunch of parsley, finely chopped

some sea salt

pinch of black pepper

small onion , very finely chopped

1/4 cup spelt flour (you can use brown rice flour if you are on gluten free diet)

 

For the soup:

2 carrots ,diced in cubes

2 celery sticks, sliced

1 potato , diced in cubes

1,5 lt water

1 egg

Juice of a lemon

pinch of salt

 

Put water and vegetables in a big ball with some salt and boil the  on medium heat. While boiling the soup mix all the meatball ingredients except spelt flour well and make a homogenous dough. Roll them into balls in the size you want. I prefer them to be 1,5 cm/2 cm  in diameter. Spread the flour on a tray and put the meatballs in the tray and roll them to cover with flour. This prevents them from sticking teach other. When the water boils put the meatballs in slowly , watching carefully not to stick. Let it boil until all the veggies soft and cooked. Then in medium size cup whip the egg yolk and mix it well with lemon juice. Add a pinch of salt. Have 2 big spoons of boiling soup and slowly add into the cup while mixing it carefully. This is to prevent egg yolk to cook instantly. Then pour the mixture slowly to the boiling soup and mix at the same time. Let it boil for another 5 minutes and serve...
