This is a great summer recipe , tasty and easy. You can serve it as an appetizer , or on the top of a vegetarian salad. 

6 small paprikas washed,tops are cut and seeds cleaned

The filling:

1 cup of crumbled feta cheese

2 tbs extra virgin olive oil

small bunch of parsley cut finely

pinch of black pepper

Mix the filling ingredients and fill the paprikas with it. Roast in 350 F oven for 20-30 minutes until the paprika softens. Turn on the broil to grill the top o paprikas. Serve warm or cold. Buon Apetite..
