Cold vegetable starters are not exactly salads and they are not just starters too. We call them ZEYTINYAGLI in Turkish which means cooked with olive oil. Olive oil is not the healthiest option to cook with . If you cannot handle the idea of cooking with olive oil then I suggest you use the half of the olive oil in the recipe to cook with and skip the sauté part. I generally sauté with very slow heat . The other half of the oil you can add when you turn the heat off. It will not be as tasty since the onions will not be as caramelized , but still good enough to enjoy. Don't forget in Mediterranean cuisine, told to be the healthiest, they only cook with olive oil. The people in Crete live up to 100 years!!!
The best thing about them is you can keep them in your fridge up to a week !!!
