Chia is one of those new ingredients I met in Canada. Chia is a great source of healthy omega-3 fats and fibre, and fortunately it's an easy food to add to your diet.Chia seeds come from a flowering plant in the mint family that's native to Mexico and Guatemala, and history suggests it was a very important food crop for the Aztecs. More about Chia will be in my blog soon , since is an important superfood. The nutrient profile varies from antioxidants to minerals. The major benefit of chia is for diabetes due to its high fibre content, 

 

1 1/2 cup almond milk (preferably homemade if not unsweetened)

1/4 cup chia seeds

6 pitted large dates

1/4 cup maple syrup

3 tbs raw cacao powder

1 tsp pure vanilla extract

pinch of himalayan salt

First put the dry chia seeds in a food processor and turn them into dust. Then add the chopped dates and pulse them few times. Add the remaining ingredients and mix. Pour them to pudding cups and decorate with dark chocolate.
